Abstract:
У кваліфікаційній роботі розглядаються теоретичні засади культурної та
гастрономічної спадщини, проаналізовано нормативно-правові документи
ЮНЕСКО, Ради Європи та України, що регламентують охорону нематеріальної
спадщини. Значну увагу приділено особливостям гастрономічних традицій
корінних народів та національних меншин України, їхній ролі у формуванні
національної ідентичності, взаємодії культур та збереженні історичної пам’яті.
Автором проаналізовано сучасний стан організації збереження гастроно-
мічної спадщини в Україні, діяльність державних і громадських інституцій,
цифрових платформ та культурних ініціатив. Обґрунтовано пропозиції щодо
удосконалення механізмів збереження гастрономічної спадщини, окреслено
можливості розвитку гастротуризму, культурної дипломатії та цифрових архівів.

The master's thesis examines the theoretical foundations of cultural and
gastronomic heritage and analyzes the regulatory and legal documents of UNESCO,
the Council of Europe, and Ukraine that regulate the protection of intangible
heritage. Considerable attention is paid to the peculiarities of the gastronomic
traditions of indigenous peoples and national minorities of Ukraine, their role in
shaping national identity, cultural interaction, and preserving historical memory.
The author analyzes the current state of the organization of gastronomic
heritage preservation in Ukraine, the activities of state and public institutions, digital
platforms, and cultural initiatives. Proposals for improving mechanisms for
preserving gastronomic heritage are substantiated, and opportunities for the
development of gastronomic tourism, cultural diplomacy, and digital archives are
outlined.
